How to Make Cinnamon Buns – or “Kanelbullar”

A tasty treat to be enjoyed at Fika time (daily time set aside for cake and coffee) the Swedes LOVE their Cinnamon Buns.

Ingredients

Makes 25 buns

35 g (1¼ oz) yeast
100 g (3½ oz) sugar
300 ml (1½ cup) milk
1 egg
120 g (4 oz) butter
1 tsp salt
1 tbs ground cardamon
750 g (26 oz) flour

Filling:
100 g (4 oz) butter
50 g (2 oz) sugar
2 tbs cinammon

Glaze:
1 egg
2 tbs water
pearl sugar

How to make Swedish Cinnamon Buns;

Firstly grab a bowl and whack in the yeast, then stir in a couple of tablespoons of milk. Pour over some nommy melted butter, your arteries should already be screaming for mercy, then pour in the milk. Chuck in all the other ingredients and either use your bare hands or a dough mixer to knead for 10-15 minutes. Cover the bowl and let the dough rise for approx 30mins at room temp.

Roll out your now risen dough to approx 3 mm (1/8 in) thick and 30 cm (12 in) wide – you don’t need to be precise. In the style of Nigella Lawson, lovingly spread the room-temperature butter on top. These are going to be some sexy buns. When you’ve finished salivating, make a mixture of sugar and cinnamon and sprinkle it over the dough, add a bit more sugar if you’ve got a really sweet tooth, just because you can. Then make sure you roll out the dough the long way, like a sweet and delicious sausage, and cut the roll into about 25 sweet, sweet slices.

Place these slices of joy with the cut edge upward in paper molds. This makes them look fabulous dharlings. Place on a baking sheet and let rise under a towel for about 60 minutes or until the buns have doubled in size. Everyone always wants bigger buns! Truth.

Finally, beat together the egg and water, brush the mixture carefully on the buns and sprinkle pearl sugar on top. Pearl sugar is a revelation and should be used with everything! Bake in the oven (220°C/425°F) for 5–8 minutes and stare at the oven throughout – or be productive and clean your working space. Check they’re cooked through and don’t let them burn on top; your kitchen will now smell amazing, not so if they burn. Take out of the oven and whilst they’re cooling on a rack make yourself a cup of coffee. Enjoy your Cinnamon Buns or “Kanelbullar” with your coffee and contemplate your kitchen successes.
